Coriander Rice

Ingredients

Cooked Rice : 2
Coriander leaves : 1 bunch
Lemon Juice or tamarind : 1 tbsp
Salt : as needed
Oil : 2 tbsp
Chana dal : 1 tsp
Whole black gram dal : 1 tsp
Mustard : ½ tsp
Green chilli : 3 or 4
Coconut grated : 3 or 4 tbsp
Black gram dal : 1 tsp

Method

Wash and cut coriander leaves. Slit green chillies.
Keep the cooked rice in a bowl.
Take one spoon of oil in a frying pan.
Add whole black gram dal and fry.
Add slit green chillies, grated coconut and cut coriander leaves.
Fry them and grind in a mixie.
Take one spoon of oil in the frying pan.
Add mustard, black gram dal, chana dal and fry.
When fried add to rice.
Add chutney, salt and lime juice.
Mix well and serve.

 

P.S. If you are using tamarind, fry it along with coriander to prepare chutney.

If the coriander is fresh and has a good colour, the rice will be colourful.If a spoon of ghee is added to the rice while adding chutney the rice will have a good flavour.
