Avarakai Kuzhambu

Ingredients

Sabre beans : ¼ kilo
Garlic : 15 cloves
Small onions : 10
Tomato : 4
Tamarind water : 1 cup
Turmeric powder : ¼ tsp
Coconut milk : ½ cup
Salt : to taste

To Grind

Dried red chilli : 15
Grated coconut : 2 tbsp
cumin : 1 tsp

For Seasoning

Mustard : 1 tsp
Fenugreek : ½ tsp
Black gram dal : 1 tsp
Oil : 4 tbsp

Method

Cut saber beans into big pieces.
Cut tomato into small pieces.
Peel onions, garlic and slit into two.
Grind the ingredients and set side.
Heat oil in a pan.
Add the seasoning.
When the mustard splutters, add onion, garlic and fry.
Add saber beans, tomato, turmeric powder, salt and fry for a few minutes.
Mix the ground paste in a cup of water and add to the saber beans.
Let it boil for 3 minutes.
Add tamarind water and let it boil for 5 minutes.
Add coconut water and remove from stove immediately.
Garnish it with curry leaves.
